 Description(Physical and chemical properties):

1. The stability of fructo-oligosaccharides is quite good. It is very stable when heated at 140 ℃ under neutral conditions , and it still maintains high stability within the pH range (4.0-7.0 ) of conventional food .

2. FOS has obvious effect of inhibiting starch retrogradation.

3. Oligofructose has strong hygroscopicity.

Properties and application:

1. Value-added beneficial bacteria, fructooligosaccharides can be selectively utilized by beneficial bacteria such as bifidobacteria and lactobacilli in the large intestine and multiply in large quantities. At the same time, bifidobacteria and the like ferment fructooligosaccharides into short-chain fatty acids and a small amount of gas.

2. Hypoglycemia reaction, the intake of fructooligosaccharides will not cause fluctuations in blood sugar levels, so it can be used as a sweetener for patients with high blood pressure, diabetes and obesity.
